Today I’m back making African dishes you may not have heard of🇨🇩👀 Today we’re cooking a super interesting Congolese dish called Mbika. It reminds me of Nigerian egusi but this recipe is much easier and differs slightly in the methods used. It’s usually served with kwanga or a pounded grain :) Ingredients: 500g goat meat chunks 2 maggi cubes 1 tsp garlic powder 1 tsp ginger powder 1 tsp paprika 1/2 tsp chilli powder 1 tbsp oil 3 cups powdered egusi 2 eggs Touch of water to combine 1 tbsp vegetable paste Vegetable paste 1 green pepper 1 white onion 3 spring onions 1 green scotch bonnet 4 cloves of garlic 1 can of chopped tomatoes (blended) 1 tsp salt Steps: 1. Begin by seasoning the goat meat with all the spices listed above and cook for 15 minutes at 190*C. 2. Combine the ingredients for egusi mixture until you achieve a rough paste 3. Cook the egusi paste in 2 cups of boiling water. Carefully spoon in the mixture in small increments. Cook for around 10 minutes until the egusi hardens (this shows its cooked through) 4. Add in the blended tomatoes, meat and vegetable paste. Allow to cook together for a further 20 minutes 5.
