It’s loaded with taco-seasoned beef, tender sweet potatoes, peppers and melty cheese for the most delicious healthy comfort meal! It’s SO easy to make, comes together in just 30 minutes and is all made in ONE pan, so there’s basically no cleanup! 🙌 The perfect cozy weeknight dinner the whole family will love! Recipe below and linked in my bio for a printable version with macros💚 Recipe 👇 Ingredients: - 1 red bell pepper, diced - 1 red onion, diced - 3 medium sweet potatoes, diced into small cubes - ½ tbsp olive oil - 1 lb lean ground beef - 1 tbsp minced garlic - 1 packet taco seasoning - 1 (14.5 oz) can diced tomatoes - 1 cup water or beef bone broth - ½ cup shredded cheddar cheese - ¼ cup fresh cilantro Instructions: - Heat the olive oil in a large skillet. Add the ground beef and cook for 4–5 minutes, until almost fully browned. - Add the bell pepper, onion and garlic. Cook for another 2–3 minutes, until the vegetables begin to soften. - Add the taco seasoning and 2 tbsp of water. Stir until combined, then transfer the beef mixture to a bowl. -Add the sweet potatoes, diced tomatoes and water or beef bone broth to the skillet. Stir, cover and bring to a boil. - Reduce the heat and simmer for about 10 minutes, stirring occasionally, until the sweet potatoes are fork-tender and have absorbed most of the liquid. - Add the beef and vegetables back to the skillet and stir everything together. - Remove from the heat, sprinkle the cheese on top and cover for a few minutes, until melted. - Top with fresh cilantro and enjoy! Makes 4 servings!
