Simple basket recipe with bread, dates, olives, and lentil paste  Ingredients 4 flattened loaves or rustic pieces of bread 1 cup of dates 1/2 cup of green and black olives 1 cup of cooked lentils 1 tablespoon of olive oil 1 teaspoon of lemon juice 1 pinch of salt 1 pinch of cumin, optional Fresh herbs for garnish  Method Cook the lentils in water until tender. Drain well and place in a bowl. Mash the lentils with the olive oil, lemon juice, salt, and cumin. Mix until you get a rustic paste. Quickly warm the bread in a frying pan or at a low oven temperature. Place the bread in a simple basket. Arrange the dates beside it. Add the olives to a small bowl or directly into the basket. Put the lentil paste into a small clay or ceramic pot. Finish with fresh herbs. Serve as a humble, shareable, and comforting meal.
