Actually her change does made sense, it was just poorly scripted. She came to Westeros with a dreamy vision how the folk would love her like in Essos, how everyone would bend their knee in front of the „rightful ruler“, but she was humbled quickly. She also had to watch Jon Snow, who was a „bastard“ to be chosen as King of the North, loved and celebrated by everyone around him. Then she found out this man is not only a Targaryen, but her older brothers legal son, means the real heir to the iron throne. Plus she lost not one, but two of her dragons, which she saw as her babies. Then did Cercei behead Missandei right in front of her. Missandei was the one she trusted the most, the one who saw „Dany“ behind the strong woman, who treated her almost like a sister. And Missandei‘s last words to her were: „Dracarys“ as if she told Daenerys to burn everything down. The problem in all that was—The last season was very rushed. Very, very rushed. If better scripted and build up over time, it could’ve made totally sense how she burned everything down in the end.
