It’s the juiciest, most flavorful chicken I’ve had all year, and you better believe I’m making it on repeat until further notice. Recipe 2 chicken breasts Salt and pepper, to taste Paprika Marinade ¼ cup fresh lime juice 1 tbsp honey 1 tsp cumin 1 tsp paprika ½ tsp garlic powder ½ tsp sea salt 3 large garlic cloves, minced 4 red Thai chilies, seeded and finely chopped 2 tbsp chopped cilantro Sauce 1 tbsp butter 1 cup chicken broth, plus ¼ cup for the slurry Juice of ½-1 orange 1 heaping tbsp sweet chili sauce Reserved marinade 1 tsp paprika 1 tsp cumin ½ tsp garlic powder 1 heaping tsp cornstarch 1 bunch asparagus 1 orange, sliced Boil potatoes until fork tender and mash however you like. Score the chicken in a crisscross pattern without cutting all the way through. Season generously with salt, pepper, and paprika. Whisk together all of the marinade ingredients, add the chicken, and marinate for at least 20 minutes. Heat a drizzle of oil in a large skillet over medium-high heat. Remove the chicken, reserving the marinade, and sear until nearly cooked through. Transfer to a plate. In the same skillet, melt the butter. Stir in the chicken broth, orange juice, sweet chili sauce, reserved marinade, paprika, cumin, and garlic powder. Add the asparagus and orange slices, then cook until the asparagus is tender. If needed, add a little more broth so there’s still plenty of sauce. Stir together the cornstarch and ¼ cup broth, then pour it into the skillet and simmer until slightly thickened. Return the chicken to the skillet and simmer until fully cooked, spooning the sauce over the top.
