Day 11 of 100: Easy Big Mac tacos 🌮🍔 Here are my top tips for creating the best Big Mac Tacos, with caramalised beef, crispy-yet-soft tortillas with no grease in sight, crunchy toppings, and that tangy sauce that really pulls it all together. I even have recommendations for brands of sauce, cheese and pickles. Ingredients: 6 mini tortillas or "street" tortillas 500 g lean beef mince, 10% fat (18oz) 1 cup shredded iceberg lettuce, shredded into strips 1/4 cup white onion, finely diced 1/4 cup sweet spices gherkins, finely diced (or pickles) Special burger sauce (my favourite is from Woolworths) 6 slices smokey plastic cheese How to make Big Mac tacos: 1. Prepare your toppings. Cut your lettuce into long, thin strips. Finely dice your onion, and finely dice your gherkins/pickles. 2. Press a thin layer of mince down on your tortillas. Bring the meat almost all the way to the edges, as the meat will shrink when cooked. 3. Place your tacos mince side down on a hot, pre-heated pan. Place a heavy pot and push down on your tacos while cooking (you don’t have to do this the whole time, just do it every 30 seconds or so for about 10 seconds). You should have caramalised beef (you can take a sneak peak before flipping). 4. Flip your tacos. If they’re not deeply golden brown and caramalised, flip them back over and keep cooking them until they’re deeply golden brown, almost charred. 5. Turn off the heat and add two slices of plastic cheese (one slice per taco). This cooks the underside of the taco, absorbing any excess grease, and helps the cheese to melt. 6. When your cheese has slightly melted, top with crunchy lettuce, pickles and onions, and finally, a generous squirt of your special burger sauce. ENJOY your Big Mac tacos! Cheese: you want bright orange/yellow smokey plastic cheese. I get mine from Woolworths. Sauce: if you’re in Australia, Woolworths does the best ‘special burger sauce’.
