It is called the mercury ball test / water test. It tells you when is the right time to add the oil in the pan. If you add oil too soon before the pan is hot enough, food will stick! This trick helps you determine when this right time is. Here is how you do it: 1. Heat your stainless steel pan over medium heat 2. Grab a few drops of water and add to the pan. If they sizzle out and evaporate, the pan is not hot enough, wait thirty seconds and try again. 3. Add a few more drops. I've gotten pretty good with cooking with stainless steel, but whenever I make gyozas they always seem to stick 😭 heat it up, oil, gyozas on the pan, water to steam them, lid on and they're absolutely glued to the pan 😭

I agree with most of the comments. Every creator shows how to heat the pan to become no stick but they never demonstrate what to do after that point. Can I lower the temp? What to do when food is added and starts sticking?

I've been heating the pan long enough to get the lidenfrost effect, but when I finally add the oil and add the food it sprays hot oil EVERYWHERE and still ends up sticking 😭

I'm a chef, too. With a culinary science degree. My personal opinion... if you have to add oil, it's not non-stick. The whole point of non-stick is so you Don't have to add oil.
Also, for people that aren't experienced with stainless steel and trying to heat it that high can be dangerous. the minute you put anything in with water content, it'll boil. So be careful if you're going to do this. start with a low water content item. Don't use butter. good luck.

Ok so everything about this was pretty good but steel is not porous so when you heat it up your aren’t closing the pores. It’s becoming nonstick because of the previously mentioned leidenfrost effect and oil coating

I’ve seen enough videos of people struggling with stainless steel pan to understand that to get the hang of it is not as easy as it seems. I think a lot of people already do know about the leidenfrost effect and how it works with the pan, but what to do afterwards is what makes it hard. Yes, the water dances around means that it’s hot enough but then… what? I’ve seen people ended up burning their food, or ended up just cooling the pan down again so yeah, the learning is a bit steep, I think.

I totally understand the science but when I get to the point that the water beads up, if I put butter in, it immediately burns. I've heard you then let it cool a little but I just can't judge the right amount of time, because it either burns or sticks 😩

I'm almost 100% sure everyone with stainless steel pans are lying for fun at this point 😭 I do exactly this every single time. I've tried heating it up quickly, I've tried heating it up slowly, I've tried heating it up and then when it does the water thing I turn the heat down, I've tried leaving the heat up, I've tried oil/fats, I've tried nothing. At no point has it ever not stuck 😭😭 Tell me what I'm doing wrong and I promise you I've already tried it 😭😭

I think the major thing that confuses people here is: Once you pass the water test, can you turn the heat back down? And if you can, is that before or after adding butter/oil?

I'm tired of people saying this water test effect thing. i have tried multiple pans and got it hot enough that it does exactly what you say it should do the water and it will still stick just as bad but then also burn the food too. the only thing that kinda works is to put tons of oil.
