Coconut & Pineapple Celebration Cake Sponge 200g plain flour 30g cornflour (cornstarch) 1 tbsp baking powder ½ tsp salt 120g unsalted butter, softened 330g caster sugar 3 tbsp vegetable oil 3 large free-range eggs 1 tsp coconut extract 250ml coconut milk 80g shredded desiccated coconut Pineapple Jam 1 large tin pineapple, drained 250g granulated sugar 1 large lemon 100ml juice from pineapple Coconut Cream/Custard Filling 2 large free-range egg yolks 70g caster sugar 35g cornflour (cornstarch) 400ml Blue Dragon coconut milk 250g unsalted butter, softened 100g caster sugar For Decoration Extra shredded/desiccated coconut Method Preheat the oven to 180 c fan . Grease two small round cake tins. Line the bottoms with baking paper, then lightly grease the paper as well. In a medium bowl, sift together: flour,cornflour,baking powder,salt Mix together and set aside.In a separate large bowl, add the softened butter, vegetable oil and caster sugar.Using an electric mixer, beat for several minutes until the mixture is smooth, creamy and slightly lighter in colour.Add the eggs one at a time, mixing well after each addition.Add the coconut extract and mix briefly.Add approximately half of the coconut milk and mix until combined.You can now put the electric mixer away and use a spatula. Add half of the dry ingredients to the wet mixture. Gently fold together until almost combined.Add the remaining coconut milk and fold gently.Add the remaining dry ingredients and fold until the batter is smooth.Finally, add the 80g shredded coconut and gently fold it through. Do not overmix the batter.Divide the batter evenly between the two prepared round tins and smooth the tops.Bake at 180C for approximately 30–40 minutes, depending on the size and depth of your tins.Start checking at 30 minutes. The cakes are ready whena skewer inserted into the centre comes out clean or with a few moist crumbs. Remove from the oven and leave the cakes in their tins for about 10 minutes.Then carefully turn them out onto a cooling rack and allow them to cool Meanwhile Drain the pineapple well.Put the pineapple into a food processor and pulse until it is finely chopped.
