@conscious.app: Hu Kitchen has to be one of the most disappointing sellouts we have ever seen. Hu Kitchen opened in 2012 on Fifth Avenue in New York. It was a restaurant and market run by Jason Karp and his family. The idea was that food could taste good without refined sugar, additives, or heavy processing. Hu built its name on organic cacao, Fairtrade labels that promise farmers a fair price, and the slogan "Get Back to Human." Its chocolate hit Whole Foods in March 2013 and was in about 3,000 stores by the end of 2018. In April 2019 Mondelēz, the company behind Oreo and Cadbury, bought 7 percent of Hu and the right to buy the rest first. On January 4, 2021, it bought the other 93 percent for about $229 million in cash. In 2022 Channel 4 filmed children as young as 10 using machetes on Ghana farms supplying Cadbury through Cocoa Life, Mondelēz's own ethics program. The US Labor Department estimates 1.56 million children do dangerous cocoa work there. Mondelēz denies profiting from child labor. Since 2022 Mondelēz has funded Celleste Bio, an Israeli startup growing cocoa cells in tanks instead of on farms. In April 2026 they made about a dozen test bars, aiming to sell by 2027, a method that makes cocoa butter without any cocoa farmers. Mondelēz owns Cadbury, Milka, Toblerone, Côte d'Or, Daim, Freia, Marabou, Lacta, Alpen Gold, 5 Star and Hu. It bought nine companies after 2018, including Clif Bar for $2.9 billion, Tate's Bake Shop and Perfect Snacks, and reviews 35 to 40 targets a year. The wrapper still says organic, Fairtrade and Get Back to Human. The restaurant that started it closed in September 2020, and every dollar now goes to a company that buys up the brands people switch to when they stop trusting the big ones. There’re a few brands that make chocolate bars using fair trade. Not many are known or are a bit pricey yet, the labor of being responsible with supply chain, it’s honestly a labor of dedication.
