Creamy feta and pomegranate, it is one that is sure to delight 😋 Festive Spiced Maple Pumpkin 🎄🎅 INGREDIENTS - serves 8-10 Spiced maple pumpkin: 1.2kg pumpkin (try Kent) 1.5 tablespoons maple syrup 2 tablespoons extra virgin olive oil 1.5 teaspoons ground cumin 1 teaspoon ground coriander 1 teaspoon rosemary (fresh or dried) 1/2 teaspoon salt 1/2 teaspoon cracked pepper Cumin toasted seeds: ½ cup pumpkin seeds ¼ teaspoon cumin Pinch of salt 1 teaspoon extra virgin olive oil To serve: 80g crumbled feta Handful of fresh mint leaves Pomegranate seeds/arils (or dried cranberries) METHOD: Preheat the oven to 220c. Take two large baking trays and line with baking paper. Cut pumpkin into wedges approximately 3-4cm thick keeping the skin on. In a small bowl, make marinade by combining maple syrup, extra virgin olive oil, cumin, coriander, chopped rosemary, salt and pepper in a small bowl. Pour this over the pumpkin and use your hands to coat the pieces well on both sides. Spread pumpkin evenly over the two trays. Bake for 30-40 minutes, or until the pumpkin is tender and starting to caramelize. Meanwhile add pumpkin seeds to a baking tray. Drizzle lightly with extra virgin olive oil and season with cumin and salt. Toss to coat. Bake pumpkin seeds to toast them - approximately 5 minutes, watching carefully as the oven is very hot. Place roasted pumpkin on a serving tray. Scatter with mint leaves, crumbled feta, toasted pumpkin seeds and pomegranate arils. Drizzle with extra virgin olive oil and serve warm.
