Classic Coconut Rice Ingredients * 2 tbsp oil * 2 bell peppers * ½ onion * 2 to 3 Scotch bonnet peppers * Dried smoked catfish, cleaned and deboned * 2 tbsp ground crayfish * 1 tsp salt * 1 tsp Knorr powder * 2 cups coconut milk * 1 cup chicken broth or water * 2 cups rice, washed and drained * Extra salt, if needed Instructions 1. Roughly blend the bell peppers, onion, and Scotch bonnet peppers in a chopper or food processor. 2. Heat the oil in a pot, then add the blended pepper mixture. Cook until reduced and the raw pepper taste is gone. 3. Add the smoked fish and season with 1 teaspoon salt and the Knorr powder. Stir and fry for a few minutes. 4. Add the ground crayfish and continue frying until the mixture darkens slightly. 5. Pour in the coconut milk and chicken broth or water, then stir. 6. Add the washed rice. Taste and add more salt if needed. 7. Cover tightly and cook on low heat for about 30 minutes, or until the rice is tender and the liquid has been absorbed. 8. Mix well and serve.
