@foodbybrandon: Loaded Caramelised Sweet Potato with Taco Beef, Avocado Crema and Pickled Jalapeños 🤩 I make some variation of this meal at least once a week. By far the best way to cook sweet potatoes - perfectly caramelised and loaded with delicious toppings. My go to for a healthy post workout meal or weeknight dinner. 👇🏼Full recipe and cooking method below. (Approx 2 serves): 🍠 Caramelised Baked Sweet Potato: * 2 medium sweet potatoes * Olive oil spray * Salt and pepper * 1 tsp Garlic powder Cut your sweet potatoes in half long ways. Spray with cooking oil and season both sides. Place flat down on a lined baking tray. Bake in the oven at one 190°C for 45-50mins until soft and caramelised inside. Do not flip them. Let them cool for at least 5 mins face down before serving. 🥑 Avocado Crema: * 1 ripe avocado * 2 tbsp low-fat cottage cheese (or Greek yoghurt) * 1 handful fresh coriander * Juice of 1 lime * 1 garlic clove * 1 tsp salt * 1 tsp black pepper, * 1-2 tbsp water (to thin, if needed) Add all ingredients to a blender or food processor. Blend until completely smooth. If needed, add water, 1 tablespoon at a time for desired consistency. Taste and adjust with extra lime juice or salt if needed. 🥩 Taco Beef: - 400-500g extra lean beef mince - Taco seasoning of choice - 1 small brown onion diced - 2 small tin black beans, drained and rinsed with water - Salt and pepper to taste Heat a pan on medium high heat. Spray with olive oil.Add the beef mince, breaking it apart and cooking until browned. Add the taco seasoning, onion and a splash of water. Cook for 1-2 mins until sauce thickens then stir through the black beans.
