I find my crumb to be tighter than I like. I’ve tried higher hydration and also being more gentle during shaping and I’m still coming out with a tight crumb.

Just curious about adding the salt later vs adding it during the initial mix? Does it really make a difference? It seems like adding it during the stretch and fold wouldn't really get it mix in thoroughly?? thanks
