Pour counts . If you work at high volume, you’re not gonna use a jigger . Not only that do you not Wash ur tins every time you use them? Do you not wash the strainer? Why wouldn’t you wash the jigger ?

so. few things here. I've bartened on a few different levels and can confidently say ive never watched someone 1) touch the speed pour to a jigger, and 2) not change them at close every night. also never seen someone use a jigger multiple times on multiple cocktails or different spirits beyond mixing similar drinks with similar spirits, or similar ingredients... maybe ive just gotten very lucky. but damn. speed pours are literally designed to help improve accuracy and standardization to free pouring on so many levels. so being against them is honestly kind of a culture shock to me.

We’re just call it a jig now I thought all bartenders agreed on this years ago?? We agreed to drop the er for obvious reasons. Also my speed pourer isn’t touching the jig cause I can count

do people not cover nightly and clean pourers regularly ie atleast 2x week. also joggers between drinks and have multiple. speed pourers go on everything not high end or awkward.

You cap the speed pourer to prevent most of your oxidizing problems and fruit flies. And of course you only use them on things you’re using constantly. If you caught someone touching a speed pourer to anything, you have caught someone who lied about their resume and have way more problems.

I walked out of a bar on Halloween night bc the manager cussed me out for cleaning the jiggers before starting my shift bc they were literally so oxidized, the stems on the inside were falling apart and they used rubber bands around the rubber part, and those were crumbling.... cleanliness is not prioritized enough.
