One of my favorite ways to enjoy it is by turning it into the most amazing Cinnamon Roll Stuffed French Toast, filled with cinnamon sugar and topped with a cream cheese glaze. In this video, I’ll show you how to make both recipes from start to finish! ✨ ~Dough • 680 g bread flour • 330 g lukewarm milk • 90 g granulated sugar • 12 g salt • 7 g instant yeast • 3 large eggs • 1 egg yolk • 1 tsp vanilla extract • 1 tsp ground cinnamon • 140 g unsalted butter, softened ~Egg Wash • 1 egg • 1 tbsp milk Instructions 1. In a small bowl, warm a small portion of the milk and mix it with the instant yeast and 1 teaspoon of the sugar. Let it sit for about 10 minutes, or until foamy. 2. In the bowl of a stand mixer fitted with the dough hook, combine the yeast mixture, the remaining milk, eggs, egg yolk, and vanilla extract. 3. Add the bread flour, remaining sugar, cinnamon, and salt. Mix on low speed until a shaggy dough forms, then knead for 8–10 minutes until smooth. 4. Add the softened butter a little at a time, allowing each addition to fully incorporate before adding more. Continue kneading for 10–15 minutes, or until the dough is smooth, soft, and elastic. 5. Transfer the dough to a lightly greased bowl, cover, and let rise for 1½–2 hours, or until doubled in size. 6. Divide the dough into 6 equal pieces and shape each into a smooth ball. Arrange them in a greased loaf pan in two rows of three. 7. Cover and let rise again for 60–90 minutes, or until the dough has risen slightly above the rim of the pan. 8. Whisk together the egg and milk for the egg wash. Brush one coat over the dough about 15 minutes before baking, then apply a second coat immediately before placing it in the oven. 9. Bake at 350°F (175°C) for 30–35 minutes, or until deep golden brown. 10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Cinnamon Roll Stuffed French Toast (Makes: 2 sandwiches) ~Cinnamon Filling • 4 tbsp (56 g) unsalted butter, softened • ¼ cup (50 g) brown sugar • 1 tbsp ground cinnamon • 1 tbsp cream cheese, softened Mix all ingredients until smooth and spreadable. ~French Toast Custard • 2 large eggs • ⅓ cup (80 g) whole milk • 1 tsp vanilla extract • ½ tsp ground cinnamon • Pinch of salt Whisk until completely combined. ~Cream Cheese Glaze • 1 cup powdered sugar • 2 tbsp cream cheese, softened • 2–3 tbsp milk • ½ tsp vanilla extract Whisk until smooth and pourable. ~Assembly & Cooking 1. Spread a generous layer of the cinnamon filling over two thick slices of brioche bread. Top with the remaining slices to make two sandwiches. 2. Dip each sandwich into the custard mixture, making sure both sides are evenly coated. 3. Heat a buttered skillet over medium-low heat. Cook each sandwich for 3–4 minutes per side, or until golden brown and cooked through. 4. Transfer to a serving plate and drizzle generously with the cream cheese glaze while still warm. 5.
