Nowruz (Persian New Year) is just around the corner and Persians around the world are going to celebrate the first day of spring. Welcome the season with your family & friends by making these elegant, delicious & colourful savoury Persian mini rice cakes featuring the aromatic and fluffy Tilda Pure Basmati Rice.   These can easily be prepared in advance and warmed up before serving which is my preference although you can serve them cold.   In this recipe, I have chosen two popular famous Persian rice dishes. One is Albaloo Polo, which is sour cherry rice, often served with meatballs, it is a sweet & sour and super tasty dish. The other is sabzi polo with fish (mahi) which is a Nowruz (Persian New Year) special. It is made with fresh herbs and traditionally served with fried fish.   These rice cakes should be aromatic with a fluffy texture so I would recommend Tilda Pure Basmati Rice.   If you are vegetarian, just leave the meat out.
