It was because of the type of eruption. Red eruptions, like this, are when lava spews put of the mouth, and create lava flows. Those are usually very slow, but they light wildfires and that's what makes them dangerous. Gray eruptions, which is Pompeii was, is literally an explosion. pressure and heat and gas builds under the mountain and explodes out of the mountain, and all of the ash and rock from inside comes rushing down at several hundred km an hour, and exceeds temperatures of 4,000° C. Temperatures that hot prevent decomposition, and basically seal you in scalding hot cement, which is how you get the preserved corpses in Pompeii.

it's the pyroclastic surges heating upto 1000°c and toxic gas that killed them, traveling at a speed of approximately hundred miles an hour, and pompei is said to be around only 6 miles away from the volcano. So they're dead even befor the lava reach there homes
