Ingredients For the Peppers * 4 large bell peppers * 1 tbsp olive oil * ½ tsp salt * ¼ tsp black pepper For the Cheesesteak Filling * 1½ lbs shaved steak or very thinly sliced sirloin * 1 tbsp olive oil * 2 tbsp butter * 1 large yellow onion, thinly sliced * 8 oz mushrooms, sliced, optional * 3 cloves garlic, minced * 1 tbsp Worcestershire sauce * ½ tsp garlic powder * ½ tsp onion powder * ½ tsp salt * ½ tsp black pepper * 8 slices provolone cheese * 1 tbsp chopped fresh parsley Directions 1. Roast the peppers. Preheat oven to 400°F. Slice the bell peppers in half lengthwise and remove the seeds and membranes. Place them cut-side up on a parchment-lined baking sheet. Brush lightly with olive oil and season with salt and pepper. Bake for 12–15 minutes. You want them slightly tender but still sturdy enough to hold all that filling. 2. Caramelize the onions. While the peppers roast, melt 1 tablespoon butter in a large skillet over medium heat. Add the sliced onions and cook for 8–10 minutes, stirring occasionally, until soft and golden. If using mushrooms, add them during the last 5 minutes. Transfer everything to a plate. 3. Sear the steak. Turn the heat up to medium-high and add olive oil. Pat the steak dry and season with garlic powder, onion powder, salt and pepper. Add the steak in a thin layer and cook for just 2–3 minutes, tossing occasionally, until browned. If your skillet is crowded, cook it in two batches so the steak sears instead of steaming. 4. Add the garlic butter. Reduce the heat to medium. Add the remaining tablespoon of butter and minced garlic. Cook for about 30 seconds, then add the Worcestershire sauce. Return the onions and mushrooms to the skillet and toss everything together. Remove from the heat so the steak doesn’t overcook. 5. Stuff the peppers. Remove the peppers from the oven. Place ½ slice of provolone inside the bottom of each pepper. Divide the cheesesteak mixture evenly among the 8 halves. Top each with the remaining provolone. 6. Get that cheese bubbly. Return to the oven for 5–7 minutes, until the cheese is completely melted. For that really good cheesesteak look, switch the oven to broil for the final 1–2 minutes so the provolone gets a few lightly golden areas.
