Ingredients * 1 lb ground turkey or ground chicken * 1 medium-large sweet potato, peeled and cut into small ½-inch cubes * 1 tbsp olive oil * ½ small onion, diced * 2 cloves garlic, minced * 1 packet taco seasoning, or about 2 tbsp * 1 can black beans, drained and rinsed * 1 cup frozen corn * 1 can red enchilada sauce, about 10 oz * ½ cup chicken broth * 1½ cups shredded Mexican-blend or cheddar cheese * Salt and pepper to taste Optional toppings: sour cream, avocado, cilantro, green onions, crushed tortilla chips, jalapeños or a drizzle of hot honey.
