I've noticed before that you tend to bring the tray from the oven to the counter & then fill with the batter. It's best to take the batter to the oven & fill with the tray still on the oven shelf.

Equal parts, milk, plain flour, eggs. Pre heat oven to 190°c. 374 Fahrenheit. Put oil in your yorkie tray and let it get hot. Fill the moulds to just under the rim and cook for 20 mins without opening the oven door.
