@clearlynotkelsey: ✨Homemade English Muffins✨ Ingredients * 1 tbsp active yeast * 1 tsp honey * 1½ cups whole milk, warmed to about 110°F * 4 cups bread flour * 1 tsp salt * 2 tbsp unsalted butter, melted and cooled * Cornmeal, for coating Instructions 1. Add the yeast and honey to the warm milk and whisk to combine. Set aside for about 5–10 minutes, until the mixture is foamy. 2. In a large bowl, or the bowl of a stand mixer, whisk together the bread flour and salt. 3. Pour in the yeast mixture and melted, cooled butter. Mix until a shaggy dough forms. 4. Knead by hand for about 10 minutes, or using a stand mixer fitted with the dough hook for 5–6 minutes, until the dough is smooth and elastic. 5. Shape the dough into a ball and place it in a lightly oiled bowl. Cover and let rise in a warm spot for about 45 minutes, or until doubled in size. 6. While the dough rises, generously sprinkle a baking sheet or tray with cornmeal. 7. Once the dough has doubled, gently press it down to release excess air. Roll it out to about 1 inch thick, then cut into rounds using a biscuit or cookie cutter. A drinking glass works too! 8. Place the rounds onto the prepared tray, gently coating both sides with cornmeal. Cover and let rise for another 45 minutes, or until noticeably puffy. 9. Heat a large skillet or griddle over medium-low heat. Place the English muffins in the pan, leaving a little room between each one. 10. Cook for 6–8 minutes per side, or until deeply golden brown on both sides and cooked through. If they’re browning too quickly before the centers are done, reduce the heat. 11. Transfer to a wire rack and allow to cool before splitting. For those classic nooks and crannies, use a fork to split them instead of slicing them with a knife.
