before anyone comes at me in the comments…i am not saying this is a balanced meal…just balance in life! (for the cake) you'll need: - 200g unsalted butter - 200g caster sugar - 250g self raising flour - 1tsp baking powder - 1tsp vanilla extract - 4 eggs - zest of 2 lemons (for the drizzle) - juice of 2 lemons - 1 cup icing sugar method: 1. begin by placing all the cake ingredients into a large bowl and whisking until smooth (no need to whisk anything separately, just all in one go!). 2. pop into a lined 900g loaf tin and bake at 180c for approximately 45 minutes. 3. meanwhile, prepare the icing by mixing together the lemon juice and icing sugar until throughly combined. 4. check to see if the cake is cooked all the way through by placing a skewer into the middle (it should come out clean!). 5. if not, place a layer of foil on top of the cake to ensure it doesn't brown too much and cook for a further 10-15 minutes until the skewer comes out clean! 6. remove from the oven and whilst the cake is hot, prick all over with a skewer (at different depths!). 7. pour over the lemon drizzle in an even layer (don't worry if it seeps down the sides, that's actually even better!). 8. leave to cool for at least 15 minutes before removing from the tin. peel off the paper and serve into slices. 9. serve on its own or with a dollop of greek yogurt and fresh raspberries like i did… enjoy! 🍋 (the recipe & method is inspired by the queen @Mary Berry 🤍) #breakfastrecipes #lemondrizzle #lemon #cake #yogurt
