The honey gives it that warm caramelized flavor, and the flaky salt at the end keeps it from tasting too sweet. The best part is the big clusters. I baked it on my @Caraway Home baking sheet, which has basically become my go-to for granola because nothing ever seems to stick and the whole batch lifts off so cleanly once it cools. Salted Honey Butter Granola * 3 cups old-fashioned oats * ¾ cup chopped pecans or walnuts, optional * ½ tsp cinnamon, optional * ½ tsp salt * ¼ cup unsalted butter * ⅓ cup honey * 1 Tbsp brown sugar * 1½ tsp vanilla * 1 egg white * Flaky salt for finishing Preheat oven to 300°F. In a large bowl, stir together the oats, nuts, cinnamon, and salt. Melt the butter, then whisk in the honey, brown sugar, and vanilla. Pour the honey-butter mixture over the oats and stir until everything is well coated. Whisk the egg white until foamy, then gently fold it into the granola. This helps create those big clusters. Spread the mixture onto a baking sheet and press it firmly into an even layer. Bake for 20 minutes, rotate the pan without stirring, then bake another 15–20 minutes, until golden. Let the granola cool completely on the pan before touching it. Once cool, break it into big clusters and finish with a pinch of flaky salt.
