I was thinking about this while canning like 30 pints of jam this weekend and finishing off a 32oz jar of lemon juice: citric acid. If you dont live in an area where lemons/citrus grow, so many canning recipes are only reliably safe with some type of added acid.

Depends on how long the struggle lasts. if you can't eat right now, you're screwed, but if can eat right now and in 3 months you can't, then seeds or plants are needed. see what I mean. easiest and cheap exchange items: Beer, Toilet Paper, Toothpaste, Bandaid and Antiseptic.
