Mango Petit Gâteaux 🥭 These mango petit gâteaux are incredibly light, creamy, and bursting with fresh mango flavor. Instead of a traditional jelly insert, they’re made with real mango purée and fresh mango pieces, creating a delicate texture and rich tropical taste. Mango Purée 	●	1 ripe mango 	●	8 g NH pectin 	●	30 g sugar Peel and blend the mango until smooth. Bring to a gentle boil. Mix the pectin with the sugar, then whisk it into the hot purée. It will set almost instantly. If desired, decorate with a touch of green and red to resemble a real mango.
