Baked Eggplant with Mozzarella 🍆🧀 A simple and very flavorful baked eggplant with tomato sauce and melted mozzarella. Slice the eggplant accordion-style. In a small bowl mix olive oil, minced garlic, oregano, paprika, salt and pepper. Brush the eggplant well, getting the mixture into the cuts and all over the surface. Bake at 200°C for 30 minutes (top-bottom heat with convection). For the sauce, sauté one garlic clove in a pan. Add crushed tomatoes in their own juice, fresh basil, oregano, salt, pepper and a pinch of sugar. Simmer until the sauce becomes thick. Take the eggplant out of the oven and place mozzarella slices into the cuts. Bake for another 15 minutes. Serve the eggplant over the tomato sauce. Finish with grated parmesan and fresh basil.
