Another what I eat on repeat at 46 because sourdough + eggs will probably always be one of my favorite easy meals. 🤍 I have a pretty sensitive stomach, and a good-quality, traditionally fermented sourdough tends to work really well for me. The fermentation process can make it easier to digest than some other breads, and I love getting mine locally from @smallaxebread Here’s what I added: 🍞 1 slice local sourdough — fermented, satisfying carbs and a little more gut-friendly for me than many traditional breads 🥚 2 hard-boiled eggs — protein, choline + nutrients that support muscle and brain health as we get older (I bring mine to a boil, remove from heat for eight minutes cover and then rinse under cool water and set out to cool before placing in the fridge.) 🥑 ½ avocado — healthy fats + fiber for fullness and hormone-supportive nutrition 🌿 Fresh dill — herbs are such an easy way to add flavor + plant compounds 🧀 Freshly shaved Parmesan — calcium + protein, especially important as we think about maintaining bone health over 40 🌱 Sprouts — an easy little boost of micronutrients and antioxidants 🫒 Good-quality extra virgin olive oil — one of my favorite sources of heart-healthy monounsaturated fats. This is the olive oil I brought home from Italy, and the flavor makes such a difference. 🧂 Flaky sea salt + cracked pepper 💜 Seasonal figs + plums — fiber, antioxidants and naturally sweet seasonal fruit on the side I mash the eggs and avocado together but leave plenty of texture, pile everything onto the sourdough, and finish it with the olive oil, salt and pepper. #healthyrecipe #healthymeals #simplerecipes #over40women
