CHILLI🌶️ pov: you make a chilli so good you’re already excited for tomorrow’s leftovers ✨🤎 Chilli con carne is one of those dinners that just feels like a hug in a bowl… especially when it’s cold outside, the candles are lit and you’ve got a big cosy bowl of this in front of you!!🫶🏼✨ The secret? Letting it simmer low and slow until it turns rich, thick and full of flavour. And yes… the little square of dark chocolate at the end sounds strange but trust me  Ingredients (serves 4) •400g beef mince •1 large onion/ frozen diced  •1 red pepper •2 garlic cloves/tsp lazy garlic •2 tbsp tomato purée •1 packet Old El Paso chilli seasoning •2 400g tins chopped tomatoes •1 beef stock cube •150ml boiling water • kidney beans, drained & rinsed •1 small square (5–10g) 79% dark chocolate 👩🏼‍🍳 1. Add the beef mince and cook until browned, breaking it up as it cooks.  2. Add the onion and diced red pepper. Cook for 5 minutes until softened. 3. Add the garlic and cook for around 30 seconds until fragrant. 4. Stir through the tomato purée and chilli seasoning, cooking for 1 minute to toast the spices. 5. Add the chopped tomatoes, crumble in the beef stock cube and pour in the boiling water. Give everything a good stir. 6. Bring to a simmer, then turn the heat down and let it cook low and slow for 30-40 minutes, stirring occasionally, until thick and rich. 7. Add the kidney beans for the final 10-15 minutes. 8. Stir through the dark chocolate until melted. Taste and adjust seasoning if needed. 9.
