@cookwithskye: You have to try @True Chesapeake If you’re in Maryland and want a spot that really celebrates Chesapeake Bay seafood, this one needs to be on your list. The kitchen is led by Chef Zack Mills, who was named 2025 Chef of the Year by the Restaurant Association of Maryland, and his menu is built around seasonal cooking, local sourcing, and ingredients that really showcase the region. True Chesapeake actually grew out of an oyster farm and you’ll see their own oysters on the menu alongside a rotating selection from other growers around the Bay and East Coast. Here’s what I tried: 🦪 Oysters on the Half Shell - Started with their raw oysters featuring several different varieties, including their own Huckleberry, Skinny Dipper, and Chunky Dunker, along with a rotating selection like the Choptank Sweet, Tom’s Cove Salt, Misty Point, and Salt Buoys. Everything from softer, milder oysters to those with that stronger Atlantic brine. 🔥 Cooked Oyster Trio - This one isn’t technically on the menu, but ask nicely and you might be able to get their trio of cooked oysters: Old Bay Roasted, Rockefeller, and French Onion. Three completely different takes and such a fun way to try oysters beyond the raw bar. 🥩 Steak Tartare - Local Maryland beef from Roseda Farm paired with smoked oyster aioli, Osetra caviar, and potato chips. The smoked oyster aioli ties the whole thing back into what True Chesapeake does best. 🥗 True Chesapeake Caesar - Easily one of the best Caesars I’ve had. Their version uses smoked oyster Caesar dressing and fried oyster croutons, which might officially ruin regular croutons for me. 🐟 Pan-Roasted Snakehead - Served with charred corn succotash, tomato relish, and chow chow beurre blanc. Snakehead is an invasive species in Maryland, so eating it actually helps manage the population and it also happens to be delicious. 🦀 Soft Shell Crab Sandwich - A Maryland classic with pickled red onions, tomato, Old Bay mayo, and hand-cut fries. If you’ve never had an entire soft shell crab on a sandwich before, Maryland is definitely the place to do it. 🧀 Blue Crab Mac & Cheese - Because obviously I wasn’t leaving Baltimore without adding some blue crab to the table. Between the oysters, local Maryland ingredients, and a menu that really showcases what comes out of the Chesapeake Bay, True Chesapeake was exactly the kind of place I wanted to find on this Baltimore food tour. 🦪 True Chesapeake Oyster Co. 📍 3300 Clipper Mill Rd Ste 400, Baltimore, MD 21211 (Whitehall Hill)
