Sri Lankan Isso Wade 🇱🇰 Sri Lankan isso wade is an iconic street food made with coarsely ground chana dhal and topped with spicy, marinated prawns. It is especially popular at Galle Face Green in Colombo, where you can find this much-loved snack among the many delicious Sri Lankan street foods. ‘Isso’ means prawns or shrimp in Sinhala, one of the main languages of Sri Lanka. Everyone has their own way of making isso wade, and this is how I make mine. I like to grind the chana dhal a little more coarsely, which gives the wade a delicious texture. Some people add a little orange food colouring to give the isso wade a brighter colour. You can add it if you prefer, but it is completely optional. These crispy, flavourful prawn fritters are best served hot with tangy tamarind sauce, chopped carrot and onion. The combination of crunchy dhal and spicy prawns makes this a delicious Sri Lankan street food favourite. Makes: 10–12 isso wade Ingredients For the isso wade Chana dhal – 300 g Onion – ½, finely chopped Curry leaves – a few, finely chopped Green chillies – 1–2, finely chopped Salt – ½ tablespoon Turmeric powder – ¼ teaspoon Chilli powder – 1 teaspoon For the prawns Prawns – 10–12 large or 20–24 small Salt – ½ tablespoon Chilli powder – ½ tablespoon Turmeric powder – ¼ teaspoon For the slurry Plain flour – 3 tablespoons Water – 2 tablespoons To serve Tamarind sauce Chopped carrot Chopped onion Method 1. Soak the chana dhal in water for 3–4 hours, until softened. Drain thoroughly. 2. Transfer the dhal to a food processor and pulse until coarsely ground. Do not add water. 3. Transfer the ground dhal to a bowl. Add the onion, curry leaves, green chillies, salt, turmeric powder and chilli powder. Mix well. 4. Clean the prawns and season with the salt, chilli powder and turmeric powder. Set aside to marinate. 5. In a small bowl, whisk the plain flour and water into a smooth slurry. 6. Shape a portion of the dhal mixture into a ball, then flatten it into a round disc. 7. Brush a little slurry over the centre of the disc and place one large prawn or two small prawns on top. Press gently to secure. 8. Heat the oil in a pan over medium heat. Carefully place each isso wade in the oil with the dhal side down and the prawn side facing up. This helps keep the prawn in place. 9. Fry until golden brown, then carefully turn and fry the other side until golden and the prawns are cooked through. 10. Serve hot with tamarind sauce, chopped carrot and chopped onion. If you have any questions, drop them in the comments. I’ll reply to all of you.
