Whenever it gets a little colder outside, I know exactly what I’m making. My mom would make this tomato tofu vermicelli noodle soup every time the weather changed, and now it’s the first thing I crave as soon as it gets a little bit chilly 😭 It’s warm and cozy, and it’s genuinely packed with protein from the tofu, eggs, and bone broth. It’s all done in one pot in under 30 minutes, so it’s perfect for a weeknight dinner when you’re trying to shoo away the sickness that always comes with the weather change. Link in bio for full recipe! Ingredients: 1 tbsp neutral oil 3 green onions, whites and greens chopped separately 3 cloves garlic, minced 3 large tomatoes, cut into wedges 14 oz tofu, cut into cubes 1 tbsp soy sauce 1/2 tbsp brown sugar Salt, to taste 4 cups bone broth 3 large eggs, beaten 4 oz vermicelli noodles, cooked Sesame oil, for drizzling Instructions: 1. Heat the oil in a pot over medium heat. Add the green onion whites and garlic and sauté until fragrant, about 1 minute. 2. Add the tomatoes and cook until they start to soften and release their juices. Season with the soy sauce, brown sugar, and salt to taste. 3. Add the tofu and gently stir everything together. 4. Pour in the bone broth and let it simmer for about 5 minutes. 5. Spoon a little of the hot soup into the beaten eggs and whisk to temper them. 6. Slowly stir the soup in circular motions while drizzling in the eggs to make an egg drop soup consistency. 7. Add the cooked vermicelli noodles and stir it all together. 8. Ladle into bowls and top with the fresh green onion greens and a drizzle of sesame oil for that nutty flavor. Save this for the next time it gets chilly outside and make a big pot. Promise you it won’t disappoint! #tomatotofusoup #eggdropsoup #chinesefood #souprecipe #easyasianrecipes
