@chefbelcoelho: Tasting The Forest was born of my desire to research Brazil’s sociobiodiversity, valuing productive chains and food culture. I formed a multidisciplinary team to join me on this journey, and along the way we encountered family farmers, Indigenous peoples, riverine and extractivist populations and quilombola communities, who are all preserving Brazilian food culture, SAFEguarding seeds and keeping forests standing. We began our journey in the Amazon in 2025 and this year, we went to the Caatinga semi arid plains for further research. We will continue our mission of preservation throughout the other four Brazilian biomes; mata atlântica, cerrado, pantanal and pampas. It started as an idea for a book and a documentary to record the powerful knowledge embedded in food and gastronomy as tools for socioenvironmental transformation. Tasting the Forest has now evolved into a multi-dimensional platform, developed in partnership with Reenvolver, which provides full curatorial and technical support, and Estúdio Silo, who leads the communications front. We now have two further areas of focus. We are creating the “Flavour Lab,” where research and product development can strengthen the bioeconomy and advance the socio-environmental conservation agenda of Brazil’s biomes. Additionally we will help build and strengthen networks by identifying, supporting, and managing projects in our sociobiodiverse communities.
