Lobster mac😮‍💨 Cheese (freshly grated, never pre-shredded): • 5 oz mild raw cheddar • 8 oz sharp raw cheddar • 5 oz Gruyère • 10 oz Fontina • 1/2 cup Parmigiano Reggiano Cheese Sauce: • 4 cups grass-fed heavy cream • 1 cup grass-fed whole (or raw) milk • 1 stick grass-fed salted butter, melted • 2 tbsp unbleached flour Lobster Cream Infusion: • Shells from 1 whole lobster (or 2 tails) • 3 thyme sprigs • 1 tsp black peppercorns • 2 bay leaves Seasonings: • 1 tsp cayenne • 1/2 tsp paprika • Salt & pepper to taste • 1 shallot, diced • 5 garlic cloves, minced • Chopped chives Secret Ingredients (trust me): • 2 tbsp organic miso paste • 1/2 cup mirin Pasta: • 16 oz Pipe Rigate • 1 tbsp salt (for pasta water) Cook the Lobster: • Boil water with 1 tbsp salt & 1/2 tbsp peppercorns. • Cook lobster 8–10 min, transfer to an ice bath, remove the meat & save the shells. Infuse the Cream: • Simmer shells, cream, thyme, peppercorns & bay leaves for 8–10 min. • Let steep a few minutes, then strain. Optional Lobster Butter: • Rinse the shells to remove the excess cream. • Remove the hardest shell pieces. • Blend the remaining shells with the melted butter, then strain through cheesecloth over a fine sieve. Cheese Sauce: • Cook pasta 1 minute before al dente. • over medium heat add 3 tbsp lobster butter, sauté shallot then garlic till translucent. • Add flour & seasonings, cook 2–3 min. • Slowly whisk in the milk and lobster-infused cream, then stir in the mirin & miso. • Once bubbling, turn off the heat and gradually whisk in a little over half the cheese. • If too thin, cook a little longer over medium heat. If grainy, blend until smooth. Assemble: • Fold the sauce into the pasta and mix in some chopped lobster (save some for garnish) • Layer half the mac, some reserved cheese, the remaining mac, then top with the rest of the cheese, extra Parmigiano & lobster. • Bake at 395°F until deeply golden. • Rest 15 minutes, garnish with chives & serve. #lobstermacandcheese #macandcheese #lobster #FoodTok
