@dish_by_david: Before vinegar took over, this is how every pickle was made. I make these a gallon at a time. Blossom end cut off every cucumber, so they stay crunchy. Brine is salt and water at 4.5%, spices, a splash of honey (optional, gets you extra sour). Layer garlic, dill, celery, and cucumbers in the jar, pour the brine over, bay leaves on top. 7 days, no vinegar, all bacteria already on the cucumber doing the work. Why cut the blossom end off? It's got an enzyme that softens pickles. Cut it, and keep bay leaves on top too, both help them stay crunchy.

Fermented pickles have pre and probiotics. We used to put a grape leaf or thimble berry leaf on top to keep air off the cukes.

I’ve made refrigerator pickles for years. They last for about nine months sometimes 12 months in the refrigerator and are excellent -crunchy and just the right flavor with the spices I use. I wanted to try fermenting pickles this year and honestly they’re OK but my refrigerator pickles are much crunchy and tastier. They’re just brighter than fermented pickles.
