@aryafisher20: SHAWARMA-SPICED CHICKEN & BULGUR WRAPS with FETA, CUCUMBER & TOMATOES and SCALLION YOGURT SAUCE Serves 4 Cook Time: 30 minutes INGREDIENTS 1 lb ground chicken or chicken breast, chopped 1 c. bulgur 4-8 flour tortillas 2 cloves garlic, minced 8 green onions, thinly sliced and separated 2 Persian cucumbers, chopped 2 Roma tomatoes, chopped 3 tbsp shawarma spice blend 2 tsp onion powder 6 tbsp Greek yogurt 1 c. feta cheese, crumbled 1 lemon, juiced Salt and pepper to taste DIRECTIONS • Wash and dry produce. • Trim and thinly slice scallions, separating whites from greens. Peel and mince or grate garlic. Dice tomato and cucumber. • Heat a drizzle of oil in a small pot over medium-high heat. Add scallion whites, garlic, and 1 tbsp shawarma spice blend. Cook, stirring, until scallion whites are softened and fragrant, 30 seconds. • Add bulgur, 2 cups of water, and a pinch of salt and pepper; stir to combine. • Bring to a boil, then cover and reduce to a low simmer. Cook until water has absorbed and bulgur is tender, 12-15 minutes. Keep covered off heat until ready to use. • Meanwhile, in a large skillet, heat a drizzle of oil over medium-high heat and add chicken. Season with onion powder, the remaining shawarma spice blend, salt, and pepper. Cook, stirring occasionally, until browned and cooked through. • While chicken cooks, in a small bowl, combine yogurt, lemon juice, and half the scallion greens. Taste and season with salt and pepper. • Drain any excess water from bulgur; fluff with a fork. To the bulgur, add a drizzle of olive oil, tomato, cucumbers, feta, and the remaining scallion greens; stir to combine. • Place tortillas on a clean work surface. Spread scallion yogurt sauce across the bottom third of each tortilla; top with chicken and as much bulgur salad as you like. TIP: If you have time, wrap your tortillas in damp paper towels and microwave for 30 seconds so they are easier to fold. • Fold the bottom edge of each tortilla over the filling, then fold over the left and right sides toward the filling. Roll up the tortillas, starting with the filled sides, to form wraps. • Halve wraps on a diagonal; divide between plates.
