Garlic Butter Cajun Shrimp with Sweet Corn Ingredients 1. Large shrimp – 2 lb, peeled and deveined 2. Sweet corn – 3 ears, cut into 2-inch pieces 3. Unsalted butter – 8 tbsp 4. Garlic – 6 cloves, minced 5. Olive oil – 2 tbsp 6. Cajun seasoning – 2 tbsp 7. Smoked paprika – 1 tsp 8. Old Bay seasoning – 1 tsp 9. Black pepper – 1/2 tsp 10. Red pepper flakes – 1/2 tsp 11. Lemon juice – 2 tbsp 12. Lemon zest – 1 tsp 13. Fresh parsley – 3 tbsp, chopped 14. Honey – 1 tbsp 15. Salt – 1/2 tsp Recipe 1. Pat the shrimp dry with paper towels and place them in a large bowl. Add the Cajun seasoning, smoked paprika, Old Bay seasoning, black pepper, red pepper flakes, and salt, then toss until every shrimp is evenly coated. 2. Bring a large pot of salted water to a boil and add the corn pieces. Cook for 5 to 6 minutes until the corn is tender but still firm, then drain thoroughly. 3. Melt 4 tablespoons of butter with the olive oil in a large skillet over medium-high heat. Add half of the minced garlic and cook for about 30 seconds until fragrant. 4. Add the seasoned shrimp to the skillet in a single layer. Cook for 2 to 3 minutes on the first side until browned, then turn and cook for another 1 to 2 minutes until the shrimp are opaque and cooked through. 5. Transfer the shrimp to a plate temporarily, keeping the flavorful butter and seasoning mixture in the skillet. 6. Add the remaining 4 tablespoons of butter and remaining garlic to the skillet. Cook gently for 1 minute, stirring constantly so the garlic becomes fragrant without burning. 7. Stir in the honey, lemon juice, and lemon zest, then simmer the butter sauce for 1 to 2 minutes until glossy and slightly thickened. 8. Return the cooked shrimp to the skillet and add the boiled corn pieces. Toss everything together over medium heat for 2 to 3 minutes, coating the shrimp and corn generously with the garlic butter sauce. 9. Spoon the buttery sauce repeatedly over the shrimp and corn as they finish cooking, allowing the Cajun spices, garlic, butter, and lemon to blend into a rich coating. 10. Remove the skillet from the heat and sprinkle the shrimp and corn generously with the chopped fresh parsley. 11. Transfer the shrimp and corn to a large serving tray, pouring all the remaining garlic butter sauce over the top so it pools around the seafood. 12. Serve immediately with lemon wedges, warm crusty bread, or rice for soaking up the spicy garlic butter sauce. Follow for more delicious seafood recipes and amazing food ideas!
