Fluffy pancake loaf with delicate blueberry swirls, vanilla bean whipped cream, chunky blueberry compote & loads of maple syrup. ✨ SAVE this for a little cozy breakfast :) Pancake Loaf: 1¾ cups all-purpose flour 1¾ tsp baking powder ½ tsp baking soda ¼ tsp salt ¼ cup unsalted butter, melted & cooled 2 tbsp neutral oil ½ cup sugar 2 large eggs 1 tsp vanilla extract ¼ cup Greek yogurt ½ cup whole milk 2 tbsp maple syrup Blueberry Compote: 1¾ cups blueberries, divided 3 tbsp sugar 1½ tsp lemon juice 1½ tsp cornstarch 1½ tbsp water Vanilla Bean Whipped Cream: 1 cup cold heavy cream 2 tbsp powdered sugar 1 tsp vanilla bean paste ¼ tsp salt Instructions: 1. Cook 1½ cups blueberries, sugar, lemon juice, cornstarch & water over medium heat for 5–7 minutes, gently crushing some berries, until thick and glossy. Cool completely. Blend half until smooth for the swirl; keep the other half chunky for serving and add the remaining blueberries in the chunky portion. 2. Preheat oven to 350°F. Line a 9×5-inch loaf pan. Whisk flour, baking powder, baking soda & salt. 3. Whisk melted butter, oil & sugar. Add eggs one at a time, then vanilla. Mix in Greek yogurt, milk & maple syrup. 4. Gently fold dry ingredients into wet until just combined. Layer half batter → blueberry swirl →half batter → blueberry swr. Add a few final blueberry ribbons and gently swirl 2–3 times with a knife. Don’t over-swirl! 5. Bake 45–55 minutes, until lightly springy and a toothpick comes out with a few moist crumbs. Cool 15 minutes in the pan, then completely on a rack. 6. Whip heavy cream, powdered sugar, vanilla bean paste & salt to soft peaks. 7.
