@amanda__.please: Mini Carrot Cakes Ingredients: Mini Carrot Loaves: ½ cup brown sugar ½ cup white sugar ½ cup oil 2 eggs 1 teaspoon vanilla 1 cup plain flour ½ teaspoon bicarb soda 1 teaspoon baking powder 1 teaspoon cinnamon Pinch of nutmeg Pinch of salt 1½ cups grated carrot 3 mandarins, peeled and muddled Cream Cheese Icing: 125g cream cheese, softened 30g butter, softened 1 cup icing sugar 1 teaspoon vanilla Method: Preheat the oven to 180°C and grease your mini loaf tins. Add the brown sugar, white sugar, oil and eggs to a bowl and mix together. Add the vanilla and mix through. Add the flour, bicarb soda, baking powder, cinnamon, nutmeg and salt. Mix until just combined. Add the grated carrot and muddled mandarins and fold through. Spoon the mixture into your mini loaf tins. Bake for 20–25 minutes, or until golden and cooked through. The cooking time will depend on the size of your tins. Leave the loaves to cool completely before icing. Cream Cheese Icing Beat the softened cream cheese and butter until smooth. Add the icing sugar and vanilla and beat until creamy and smooth. Spread over the cooled carrot loaves. Fruit Swaps: The fruit is there to add some moisture and loosen the mixture. You can swap the mandarins for a few oranges, crushed pineapple in juice or tinned apples in their juice.
