@therantingpanda: Back at Crystal Jade Golden Palace recently and it is still as good as we remember! Headed by Group Executive Chef Martin Foo, what sets Golden Palace apart from its sibling outlets is its dual culinary focus. Alongside refined Cantonese staples and dim sum, the brand also specialises in traditional Teochew delicacies with a modern twist. Our meal started with their Teochew Happiness Four Platter, which showcases a good variety of bites like Braised Duck, Octopus, Pork Knuckle and Drunken Duck’s Tongue. Next up was a nourishing soup –Double-boiled Fish Maw, Sea Whelk Xinhui San Bao Zha Chicken Soup. Served in a claypot, this luscious soup packs a whole lot of goodness and collagen with various premium ingredients. Other than the above, there is also a good portion of chicken meat and feet within. We had a live Coral Trout that was first fried, then simmered in a Teochew broth with radish and yellow bean. The live fish was very fresh, and this pan-fried and braised style is one of the many ways you can choose to have your fish cooked. From the wok-fried menu, we enjoyed the Sautéed Prime Beef Cube with Garlic; expect tender and flavourful beef cubes paired with crispy golden brown garlic slices - this was too easy to enjoy. If you love duck, the Applewood Smoked Crispy American Duck is one dish we highly recommend. It arrives at the table in a wooden tray, and is unveiled tableside in a puff of smoke. The skin is crispy as its name suggests, and the duck meat carries a nice smoky aroma. For greens, we had the Poached Mustard Green with Conpoy & Shrimp Roe, followed by a Shunde Style Chen's Village Flat Rice Roll with Minced Pork, Sole Fish & Pork Lardon. We loved this noodle dish - homemade steamed rice sheets are cut into noodle strips, topped with fried pork lard and deeply aromatic dried flatfish powder, and finished with a savoury sauce before tossing. It is a little similar to fried kway teow but tastes even better.
