food i grew up with • ep 16 - dumm ka qeema ingredients: * 500 g ground beef, lamb, or chicken * 1 tbsp ginger-garlic paste * salt, to taste * ½ tsp turmeric * 2 tsp red chilli powder * 1 cup yogurt * ⅓ cup roasted peanuts * ¾ cup roasted desiccated coconut * 2 tbsp roasted poppy seeds * 10 roasted cashews * 10 roasted almonds * 1 onion, thinly sliced and fried until golden and crisp * ½ cup oil * 1 tsp garam masala * ¼ cup chopped cilantro * ¼ cup chopped mint * 2 tbsp lemon juice * 2–3 green chillies, slit * 2 tbsp chopped cilantro, for finishing * 2 tbsp chopped mint, for finishing * 1 small piece of coal * 1 tsp ghee method: 1. Lightly roast the peanuts, desiccated coconut, poppy seeds, cashews, and almonds. Let them cool, then grind them into a fine paste along with the yoghurt and some water . 2. Add the ground meat to a heavy-bottomed pot along with the ginger-garlic paste, salt, turmeric, red chilli powder, ground nut mixture, fried onions, oil, garam masala, ¼ cup each of cilantro and mint, lemon juice, and slit green chillies. 3. Mix everything well, cover, and let it marinate for at least 1 hour. 4. Place the pot over low heat and cook, covered, until the meat is tender and the oil begins to separate. Stir occasionally to prevent anything from catching on the bottom. add about a cup of water as needed so get the right consistency 5. Once the meat is cooked, place a small steel bowl or piece of foil inside the pot. Add a red-hot piece of coal, pour the ghee over it, and immediately cover the pot. Let it smoke for 5 minutes, then remove the coal. 6. Finish with the remaining cilantro and mint, then serve with naan, paratha, or khatti dal and rice.
