@spicemitha: If you’ve never heard of Iyengar bakery-style masala toast, let me introduce you to one of my favorite foods from where I grew up. ❤️ Karnataka is a state in southern India, and I grew up there. This toast is one of those foods that feels very local to me — something you could walk into a neighborhood bakery and enjoy as a quick snack. Iyengar bakeries have a fascinating history in Karnataka, especially in Bengaluru. Some of the earliest bakeries date back to the late 1800s, with BB Bakery in Chickpet often credited as one of the earliest, established in 1898. These bakeries brought European-style breads and baking techniques together with Indian flavors and local tastes. Over time, they became known for foods like masala bread, vegetable puffs, khara buns and masala toast — turning something as simple as bread into something distinctly Indian. ❤️ And that’s what I love about this toast: crispy ghee-toasted bread topped with a spicy, tangy vegetable masala made with onion, carrot, cabbage and capsicum. 🥕 Ingredients: 4 bread slices • 1 small onion • 1 green chilli • ½ cup capsicum • 1 cup carrot • 2 cups cabbage • ¼ tsp turmeric • ½ tsp chilli powder • ½ tsp garam masala • salt • 1 tbsp ketchup • lime juice • oil + ghee I used my homemade milk bread, but regular soft bread works too! I wonder: maybe salt a couple of the vegetables before heating, to reduce the amount of water they have & add flavor?
