SOMETHING FISHY GOING ON! This pan fried salmon with pipi sauce is a recipe we come back to time and time again. It's such a beautfiul dish to serve at the table and it's deceptively simple to put together. All you need is a nice green salad on the side and plenty of crusty bread to mop up the delicious juices. Don't be tempted to add extra salt, there's plenty in the pipi's and pancetta! Recipe below for four 500gm fresh pipi's refreshed in cold water, then drained 4 cloves of garlic, finely chopped 1 knob ginger, peeled and finely chopped 3tsp fennel seeds 1tsp coriander seeds 1tsp smoked paprika 1/2 tsp chilli flakes 4 small salmon fillets, skin on 3tbsp olive oil 1 red onion, sliced thinly into rings on a mandolin 2 x 1cm thick slices on pancetta, finely diced 1 cup white wine 1 cup frozen peas, defrosted 1 cup chicken stock 50gm butter Finely chopped flat leaf parsley and lemon wedges to serve 1-In a mortar and pestle, pound the garlic, ginger, fennel and coriander seeds, paprika and chilliflakes into a rough paste. Set aside 2-Heat the olive oil in a heavy based pan over high heat. Sprinkle salmon lightly with sea salt then place in the pan skin side down. Use a spatula to press down on each piece to ensure you get a good crispy skin. Cook for four minutes, flip over and cook for four minutes more or until nearly cooked though. Remove and keep warm 3-Return the empty pan to the stove over medium heat and cook the onion and pancetta until softened (5mins). Add spice paste and stir to incorporate well then add the wine and simmer for a few minutes.  4-Reduce the heat to low and then add pipis, stock and peas and cook with a lid on until the pipi's have opened (discard any that do not). Remove from the heat and stir through the butter until melted. If you're a black pepper fiend like us, now is the time for a good crack! 5-Arrange salmon pieces on a large platter or bowl and then spoon the pipi sauce over the top.
