So I'm guessing you went by temp. your magic number is 202 but it's not guaranteed. Some briskets can go up too 205 internal temp, when it hits 202 internal start pushing your probe into the meat every 15 too 20 minutes, When the probe. glides in with no resistance, it's done. Don't go by a number. learn to feel it'll keep you from overcooking in your brisket will turn out perfect every time
