If I had to guess it’s a reverse bike but has some sort of gear system that once turned a slight distance it switches the direction back and go further on that gear with will reverse again. The performer is either really tight with steering or switches balance quickly

I've made one of these bikes and let tons of people try and ride it. If you ever think you can do one of these games like the video or the fair it's 100% impossible, I can give you 100 tries and you won't make it 10ft. took me a few days to learn. I had some very coordinated cousins that learned in a day. but no one can learn in the few tries they give you in the game, you will waste your money.

The steering is not just opposite direction of the handlebars but in fact it is loose causing the wheel to turn in either direction enough for the riders who hold steady to automatically fail and those who turn to overcompensate and exasperate the direction of the wheel even further.

in psychology, this is what we called explicit monitoring or reinvestment theory. It's when something is normally easy, you can perform it almost automatically. but if your brain becomes extremely focused on the goal, you may start consciously monitoring the process. thinking harder about accomplishing it can interfere with the natural execution of it.
