My husband: "I'm craving something sweet." Me and Loreen looking at each other: "Let's gooo!" So we made this soft strawberry yogurt cake, lightly sweetened with maple syrup. I used gluten-free all-purpose flour because my husband mostly follows a gluten-free diet, but you can definitely use regular all-purpose flour too. What you need: • 4 large eggs • 1/3 cup maple syrup / 80 ml • 1/2 cup plain Greek yogurt / 120 g • 1/4 cup neutral oil or butter - I used avocado oil / 60 ml • 1 cup gluten-free all-purpose flour / about 120-130 g or about 1 1/2 cups regular all-purpose flour / about 180-190 g • 2 teaspoons baking powder / 8-10 g • A pinch of salt • 11/2 cups sliced strawberries / about 250 g If you use regular all-purpose flour, you may need around 11/2 cups. Add the flour gradually, because every flour absorbs liquid differently. The batter should be thick but still pourable. If it feels too thick, add 1 tablespoon of milk or yogurt. If it feels too runny, add 1 tablespoon of flour at a time until you reach the right consistency. When you lift the spatula, it should fall slowly in a thick ribbon, not be runny like thin pancake batter and not too stiff. Preheat the oven to 350°F / 175°C. Line a baking dish with parchment paper. In a large bowl, beat the eggs with the maple syrup for 5-7 minutes, until light, fluffy, and slightly pale. Add the Greek yogurt and the oil. Mix gently just until combined. In a separate bowl, mix the flour, baking powder, and salt. Add the dry ingredients gradually to the wet ingredients. Mix gently with a spatula just until combined. Do not overmix, because the cake can become dense or gummy!! Wash, slice, and dry the strawberries well with a paper towel. Toss them with 1 teaspoon of flour, just enough to lightly coat them. Pour the batter into the baking dish. Add the strawberries on top and press them very lightly into the batter. Bake for about 35-45 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. #mom #momlife #recipes #toddler
