I love that you mentioned vegetable confit! In Montreal I had an eggplant confit at Le Petit Plateau that I still crave to this day!

Yum! that looks delicious. I I have an alternative to meal prep that works for me. it's like a modern confit. after all we have refrigeration so it's not so essential. also, I have one kidney so I cannot be salting things up like I used to. I take a tray of bone-in skin on chicken thighs. lay them snugly in a baking dish. skin up season. bake at 500 for 15 minutes, then at 350 for an hour. all week I just pull out a thigh, pull the skin off and the bone out and I have chicken that's been cooked in its own fat and is absolutely delicious. straight to chicken salad or any recipe. it lasts for several days in the fridge but if you don't get to it just bag it and freeze it.
