@bakedbymelissa: Ingredients: 3 ears of corn, shucked 2½ teaspoons salt, divided Juice of ½ lime 2 teaspoons truffle oil ½ teaspoon garlic powder Black pepper Cut the corn in half lengthwise, then into quarters. You’ll need a sharp knife for this! Set a large pot over medium-high heat and add the corn. Season with 2 teaspoons salt and bring the water to a boil. Once the water boils, remove the corn and transfer to a large bowl. Spray with avocado or olive oil. Set half the corn ribs over a gas stove, grill, or grill pan, turning with tongs until the corn is lightly charred. Don’t walk away!! I saved the other half to grill the next day; if you prefer you can go ahead and grill all of them at once. Transfer the corn back to a large bowl and add the lime juice, truffle oil, and ½ teaspoon salt. Toss to combine. Add the garlic powder and a few turns of black pepper and mix again. Taste and adjust seasoning as needed—I added a little more salt and lime juice. Add what you love!

You should use 1 tsp chili powder, 1/2 tsp each: cumin, garlic powder, salt, and juice of 1 lime. I love pepper, but don't use it on mine. Sprinkle with tajin for the kick
