I make it regularly once a week. 250 g cooked chickpeas 120 g dry cashew 130 g pitted dates 200 g tofu 240 ml plant-based milk (I use coconut milk) 1 tsp vanilla extract (optional) 1.Soak the chickpeas in water for at least 2 hours (I soak them overnight), then boil them in salted water. 2.Soak the cashews for a few hours, then rinse. 3.Soak the dates for 30–60 minutes, rinse, and remove the pits. 4.Blend all the ingredients until smooth. 5.Pour the mixture into a baking dish and bake in a preheated oven at 180°C (350°F) for 40 minutes. Mine takes 20 minutes. ——- Ingredients for soft protein cookies: 200 g cooked or canned chickpeas 150 g almond flour 1 tbsp coconut oil 2 bananas Vanilla (optional) A little water (~50-70 ml) if the blender doesn't blend the dry ingredients well Instructions: 1. Combine all ingredients except the flour in a blender. Then add the almond flour and mix well. 2. Shape the dough into any cookie shape. 3. Bake for 20 minutes at 180 degrees Celsius. Baking time varies depending on your oven. I turn off the heat when the cookies are golden brown on top and bottom. ——— Hummus with sesame oil (without garlic or tahini) Ingredients: Chickpeas (cooked) - 1 cup Sesame oil - 1.5 tbsp (I use cold-pressed) Lemon juice - 1.5-2 tbsp Water (or chickpea broth) - 3-4 tbsp Salt - to taste Cumin (ground cumin) - ¼ tsp Smoked paprika - ¼ tsp (or regular paprika, if you don't have any) Instructions: 1. Blend the chickpeas, lemon juice, salt, cumin, paprika, and water in a blender. 2. Add the sesame oil and mix. 3. When serving, you can drizzle with a little sesame oil and sprinkle with paprika.
