Remove from heat and melt in cold or room temperature butter Parsnip mashed potatoes: 1-2 parsnips, thin sliced 4-6 garlic cloves You can add herbs like thyme and rosemary Enough cream or milk to cover Simmer, covered until soft and mushy Mix with 2-3 lbs of boiled potatoes. I have lived in Italy for the last 16 years and there are VERY FEW things I miss about living in California, but parsnips in the autumn is definitely one of them. We couldn’t find Hass avocados anywhere when we moved here in 2010 but now they’re everywhere so I’m still holding out hope for parsnips!
