Making fall/halloween cake pops with my daughter Kali! 🎃 Low Sugar Toddler Halloween Cake Pops Toddler friendly cake pops made with whole ingredients and low sugar! INGREDIENTS Cake Base • 1½ cups oat flour • 1 tsp baking powder • ¼ tsp salt • 1 medium ripe banana, mashed • ⅓ cup pure maple syrup • 2 large eggs • 3 tbsp melted butter or coconut oil • 2 tsp vanilla extract Binder • 3 to 4 tbsp Tillamook cream cheese, softened Shell + Decor • 6 oz Lily’s White Chocolate Chips • 2 tsp coconut oil • Natural plant based food dye, orange • Optional: candy eyes or melted dark chocolate for faces + sprinkles INSTRUCTIONS 1. Bake: Whisk dry ingredients together. Stir in wet ingredients and pour into an 8x8 pan. Bake at 350°F for 18 to 20 minutes, until a toothpick comes out clean. 2. Cool: Let the cake cool completely to room temperature. You can also freeze it for 10 minutes. Do not mix while warm. 3. Mix + Shape: Crumble cooled cake into fine crumbs. Mix in cream cheese until a fudgy dough forms. Firmly press into pumpkin molds and pop onto a parchment lined tray. 4. Add Sticks: Melt Lily’s chocolate with 1 tsp coconut oil in 20 second intervals. Dip each lollipop stick into chocolate, push into the bottom of each pumpkin, (or shape into ball) then freeze for 15 minutes. 5. Dip + Decorate: Mix 1 tsp warm coconut oil with natural food dye until emulsified. Stir into melted white chocolate. Dip frozen pops into chocolate, tap off excess, then add candy eyes or piped faces. 6. Set: Refrigerate for 10 to 15 minutes, until the shell is firm. STORAGE • Store in an airtight container in the fridge for up to 5 days. • Let sit at room temperature for 10 minutes before serving so the inside stays soft.
